Brought up eating home cooked dishes originating from Puerto Rico and other Caribbean islands, John is so excited to dedicate this restaurant to flavorful and fun island classics with a modern twist. Dishes such as Mofongo (Mashed Plantain) with Shrimp in Garlic Mojo; Pernil, (Pork Roast Caribbean style) served with Arroz con Gandulas; Sancocho (Steak, Chicken, and Pork Stew with Yucca); and Caribbean Ceviche, are just a few to be included on the menu.

You may already be familiar with El Basque’s Proprietor and Chef, John Colón, in Bonita Springs . . . a fabulous go-to spot for intimate and delicious Basque influenced cuisine. Now, John is happy to announce next week’s opening of his new restaurant, Islas, serving what he defines as “Modern Caribe Cuisine”, a blend of home cooking and “haute cuisine”, inspired by the rhythms of the Caribbean. Born and raised in New York City, John’s parents are originally from Puerto Rico.

Three of us were so excited to try this restaurant with a terrific Spanish/Latin flare. We shared some appetizers. And could not believe how much flavor was packed into every bite from the chicharones , black bean hummus with plantains and cuanca(?). The shrimp mofungo and chicken jerk with coconut rice were so delicious, well- prepared and flavorful.
The service is second to none. Lina made us feel like we were honored guests as did chef and owner, Chef John Colon. The atmosphere is so lovely with incredibly soft, but not too dark ambient light and very comfortable chairs. It’s a lovely space I’m just perfect when you want to have great cooking out just because or for special occasion. I am looking forward to my next visit.

Fantastic, authentic Puerto Rican food. Service was very attentive. It’s always great to find these local restaurants in random shopping centers. Way better than having to go downtown to deal with the crowds.

Wonderful place to enjoy authentic Puerto Rican cuisine. My wife and I tried several dishes taste just like Abuela used to make great service the Chef/owner came over to our table and introduced himself John Colon very nice definitely a nice touch very impressed atmosphere was pleasant very welcoming would definitely recommend to family and friends.

Meet John Colon

Chef John Colón Born and raised on the Upper West Side of New York City, Chef John Colón developed an early appreciation for art, design, and hospitality.

While initially pursuing a career in entertainment, his path took an unexpected turn when he joined the team at the Four Seasons Hotel in Beverly Hills. It was there, within the world of five-star, five-diamond hospitality, that he discovered his true passion—the art of fine dining and impeccable service.
